Les mixer.<br>Fouetter le sucre et les oeufs. Ajouter aux myrtilles. Ajouter la g\u00e9latine, puis le beurre. Mixer au mixeur plongeant.<br>Verser dans moule \u00e0 insert.<\/p>\n\n\n\n<p><em><strong><span style=\"text-decoration: underline;\">Cr\u00e9meux marrons <\/span><\/strong><\/em><br><br>60 gr de lait<br>60 gr de cr\u00e8me liquide<br>25 gr de jaunes d&rsquo;oeufs<br>10 gr de sucre<br>50 gr de cr\u00e8me de marrons<br>50 gr de pur\u00e9e de marrons<br>1 gr de g\u00e9latine<\/p>\n\n\n\n<p>Blanchir les oeufs et le sucre. Ajouter la pur\u00e9e et la cr\u00e8me de marrons. <br>Faire bouillir le lait et la cr\u00e8me. Verser sur le m\u00e9lange oeufs\/sucre.<br>Faire \u00e9paissir, ajouter la g\u00e9latine. Fouetter.<br>Verser dans un plat pour avoir une \u00e9paisseur d&rsquo;environ 1 cm.<\/p>\n\n\n\n<p><em><span style=\"text-decoration: underline;\"><strong>Mousse marrons <\/strong><\/span><\/em><br><br>300 ml de cr\u00e8me<br>250 gr de cr\u00e8me de marrons<br>100 gr de pur\u00e9e de marrons<br>4 gr de g\u00e9latine<br>40 ml de cr\u00e8me<br>10 gr de rhum<br><br>Mettre les 300 ml de cr\u00e8me au frais avec bol et fouet.<br>Ramollir la g\u00e9latine.<br>Chauffer la pur\u00e9e et la cr\u00e8me de marrons, ajouter le rhum.<br>Chauffer les 40 ml de cr\u00e8me, ajouter la g\u00e9latine. L&rsquo;ajouter \u00e0 la pur\u00e9e\/cr\u00e8me de marrons.<br>Fouetter la cr\u00e8me .<br>D\u00e9tendre la cr\u00e8me\/pur\u00e9e marrons avec un peu de cr\u00e8me et finir d&rsquo;incorporer d\u00e9licatement.<br><\/p>\n\n\n\n<p><em><strong><span style=\"text-decoration: underline;\">Croustillant pralin\u00e9<\/span><\/strong><\/em><\/p>\n\n\n\n<p>75 gr de chocolat lait<br>75 gr de pralin\u00e9<br>75 gr de gavottes<br>(quantit\u00e9 \u00e0 adapter \u00e0 la taille de l\u2019entremet)<\/p>\n\n\n\n<p><em><strong><span style=\"text-decoration: underline;\">Biscuit financier<\/span><\/strong><\/em><\/p>\n\n\n\n<p>90 gr de beurre<br>100 gr de poudre d\u2019amande<br>130 gr de sucre glace<br>50 gr de farine<br>150 de blancs d\u2019oeufs<\/p>\n\n\n\n<p>Faire fondre le beurre noisette, filtrer le beurre.<br>Mettre dans un saladier poudre d\u2019amande, sucre, farine.<br>Verser les blancs d\u2019oeufs et le beurre ti\u00e8de.
