Laissez environ 8 minute \u00e0 180 \u00b0s. La tranche de  jambon doit \u00eatre s\u00e8che et craquante (chips). <br>&#8211; Emincer l\u2019\u00e9chalote, faire la revenir dans du beurre \u00e0 feux doux. Ajouter les c\u00e8pes \u00e9minc\u00e9s. Laisser cuire quelques min., ajoutez la cr\u00e8me, sel, poivre. Laisser infuser \u00e0 feu doux pendant 15 minutes.Mixer la pr\u00e9paration . <br>&#8211; Faire bouillir de l\u2019eau dans une casserole avec l\u2019\u00e9quivalent de 4 cuill\u00e8res \u00e0 soupe de vinaigre, d\u00e9poser les oeufs. Laisser cuire 2 minutes  (2\u201910, 2\u201920). <br>&#8211; D\u00e9posez un fond de cr\u00e8me de c\u00e8pes dans des ramequins chauds.
